Fried Mullet Chinese Style

Fried Mullet Chinese Style with ginger, soy sauce, cornstarch and sherry wine

Ingredients
  • mullet, 1 lb (453 g)
  • 4 scallions, finely chopped
  • 1/2 fresh ginger, finely chopped
  • 1 Tbsp soy sauce
  • 2 Tbsp sherry wine
  • 1/2 cup water
  • salt and pepper to taste
  • 1/2 cup peanut oil, for shallow frying
  • 2 Tbsp sherry wine
  • cornstarch, as needed
Instructions
  1. Wet the fish with soy sauce on both sides and fry in hot oil, 3 minutes each side.
  2. Add the chopped ginger, scallions, sherry wine, water, salt and pepper to the fish. Cover and simmer for 15 minutes.
  3. Place fish on a hot plate and pour the sauce over it. If the sauce is too thin, mix some cornstarch with cold water (1:3) and stir it in, until the sauce thickens.
