Ocean perch creole
Ingredients
- 2 pounds ocean perch fillets
- 1/4 cup butter or other fat
- 2 tablespoons flour
- 2 cups tomato juice
- 2 tablespoons chopped onion
- 3 tablespoons chopped pimiento
- 1/2 teaspoon salt
- Dash pepper
- Rice ring
Instructions
- Skin fillets and cut into 1-inch pieces.
- Melt butter, blend in flour and add all remaining ingredients except rice.
- Cook, stirring occasionally, about 15 minutes or until fish flakes easily when tested with a fork.
- Serve hot in rice ring.
