Curried Oysters

Curried oysters.
Ingredients
  • 1 pint oysters
  • 1/2 cup onion, chopped
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1-1/2 cups milk
  • 2 hard boiled eggs
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon curry powder
  • 3 cups cooked rice
Instructions
  1. Simmer oysters in their liquor about 5 minutes or until edges begin to curl. Drain.
  2. Cook onion in butter until tender.
  3. Blend in flour, add milk and cook until thick, stirring constantly.
  4. Add oysters, sliced eggs, seasonings and heat thoroughly.
  5. Serve in rice ring. Garnish with parsley.
