Fried Oysters

Fried oysters.
Ingredients
  • 1 quart select oysters
  • 2 eggs, broken
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup bread crumbs, cracker crumbs, or cornmeal
  • Tartar sauce:
  • 1/2 cup mayonnaise
  • 1 Tablespoon chopped onion
  • 1 Tablespoon chopped pickles
  • 1 Tablespoon chopped parsley
  • 1 Tablespoon chopped olives
  • Mix thoroughly and chill.
Instructions
  1. Drain oysters.
  2. Mix eggs, milk and seasonings.
  3. Dip oysters in egg mixture and roll in crumbs.
  4. Fry in hot fat; when brown on one side turn and brown other side.
  5. Cooking time about 5 minutes.
  6. Drain on absorbent paper.
  7. Serve immediately with slices of lemon or Tartar sauce.
