Oyster Souffle
Oyster souffle.
Ingredients
- 1 pint oysters
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 1 teaspoon salt
- 1/8 teaspoon pepper
- Dash nutmeg
- 3 eggs, separated
Instructions
- Drain and chop oysters.
- Melt butter, blend in flour, add milk and bring to boiling point, stirring constantly.
- Cook 3 minutes.
- Add oysters, seasonings and beaten egg yolks.
- Beat egg whites until stiff but not dry.
- Fold into oyster mixture.
- Pour into buttered casserole and bake in moderate oven at 350° F about 30 minutes or until brown.
