Erbswurst (Pea Sausage)

Erbswurst is German highly nutritional sausage made with pea flour, pork meat, pork belly, fat and onions. It has been invented in 1867 by Johann Heinrich Grüneberg in Berlin and has been made and sold in Germany ever since. When Erbswurt is mixed with water an instant pea soup is created.

Fresh pork belly or smoked bacon350 g0.77 lb
Back fat or hard fat trimmings250 g0.55 lb
Pea flour400 g0.88 lb
Ingredients per 1000g (1 kg) of materials
Salt18 g3 tsp
Pepper2.0 g1 tsp
Marjoram1.0 g1/2 tsp
Nutmeg0.3 g1/4 tsp
Thyme0.3 g1/4 tsp
Onion30 g1/2 onion
Instructions
  1. Dice fresh pork belly or smoked bacon into 1/4” (6 mm) cubes.
  2. Dice fat into 1/4” (6 mm) cubes.
  3. Chop onion finely.
  4. Fry pork belly/bacon and fat cubes on low heat until golden, stirring often.
  5. Fry onion in a little fat or oil until golden. Don’t make it brown as it will taste bitter.
  6. Heat up a pot on low fire and start adding pea flour stirring continuously. Add all spices, and keep on stirring.
  7. Add all meats, fat included, stir together and keep the mass warm otherwise it will harden.
  8. Stuff firmly into 40 mm casings making 8” (20 cm) straight links.
  9. There is no need for further cooking.
Notes
100 g (3.5 oz) of Erbswurst mixed with 750 ml (3 cups) of hot water will make delicious pea soup.
