Schlesische Bratwurst (Silesian Bratwurst)

Schlesische Bratwurst is a small diameter fine grind sausage having its origin in the former German province of Silesia (German: Schlesien).

Ingredients per 1000g (1 kg) of meat
Salt18 g3 tsp
Pepper2.0 g1 tsp
Paprika2.0 g1 tsp
Caraway0.5 g1/4 tsp
Onion powder2.0 g1 tsp
Instructions
  1. Grind meat and belly through 3 mm (1/8") plate.
  2. Mix with all ingredients.
  3. Stuff into 22-24 mm sheep casings forming 25 cm (10") links.
  4. Refrigerate.
Notes
Cook fully by boiling before serving.
