Pork shoulder, pork trimmings1000 g2.2 lb
Ingredients per 1000g (1 kg) of meat
Salt18 g3 tsp
Red chili powder4.0 g2 tsp
Paprika4.0 g2 tsp
Cayenne0.5 g1/4 tsp
Oregano, rubbed4.0 g2 Tbsp
Thyme, rubbed2.0 g1 Tbsp
Cumin2.0 g1 tsp
Cinnamon0.5 g1/4 tsp
Cloves, ground0.3 g1/8 tsp
Garlic, smashed7.0 g2 cloves
Vinegar125 ml1/2 cup
Instructions
  1. Grind pork through 1/4” (5 mm) plate.
  2. Mix all ingredients with vinegar. Pour over the meat and mix all together.
  3. Stuff into 36 mm hog casings.
  4. Refrigerate. Cook before serving.
