Low-Fat Chicken Apple Sausage

Low-fat, low-calorie chicken sausage with apples.

soy protein concentrate30 g4 Tbsp.
non-fat dry milk20 g2 Tbsp.
potato starch30 g4 Tbsp.
water150 g5/8 cup
Ingredients per 1000g (1 kg) of meat
salt12 g2 tsp.
carrageenan5.0 g1 tsp.
pepper2.0 g1 tsp.
cinnamon1.0 g½ tsp.
nutmeg1.0 g½ tsp.
ginger, ground0.5 g1/4 tsp.
sage, dry1.0 g2 tsp.
Instructions
  1. Grind chicken meat through 3/16” (5 mm) plate.
  2. Mix minced chicken meat with all ingredients together.
  3. Stuff into synthetic fibrous or cellulose casings.
  4. Cook in water at 176° F (80° C) until sausage reaches 160° F (72° C) inside.
  5. Store in refrigerator.
Notes

Soak dried apples in water or chicken stock first.
Instead of dried apples, you may use 100 g of apple sauce. Add less water (80 g, 1/3 cup) when apple sauce is used. About 130 calories per 100 g (3.5 oz) serving.
