Low-Fat Chicken Apple Sausage
Low-fat, low-calorie chicken sausage with apples.

Ingredients per 1000g (1 kg) of meat
salt | 12 g | 2 tsp. |
carrageenan | 5.0 g | 1 tsp. |
pepper | 2.0 g | 1 tsp. |
cinnamon | 1.0 g | ½ tsp. |
nutmeg | 1.0 g | ½ tsp. |
ginger, ground | 0.5 g | 1/4 tsp. |
sage, dry | 1.0 g | 2 tsp. |
Instructions
- Grind chicken meat through 3/16” (5 mm) plate.
- Mix minced chicken meat with all ingredients together.
- Stuff into synthetic fibrous or cellulose casings.
- Cook in water at 176° F (80° C) until sausage reaches 160° F (72° C) inside.
- Store in refrigerator.
Notes
Soak dried apples in water or chicken stock first.
Instead of dried apples, you may use 100 g of apple sauce. Add less water (80 g, 1/3 cup) when apple sauce is used.
